The flagship restaurant of Lainston House is set to reopen after a major renovation.
The Avenue, near Winchester, will welcome guests again on November 27, with MasterChef: The Professionals champion Tom Hamblet leading in the kitchen.
The revamp was led by Russell Sage Studio, combining modern features with the venue's historic charm, inspired by the hotel's Hampshire setting and its mile-long lime tree avenue.
Tom, known for his successful stints at Camellia at South Lodge in West Sussex and The Avenue, will introduce a fresh twist on flavours, using top-quality produce, including items from Hampshire and Lainston House Kitchen Garden.
The Avenue will offer an eight-course tasting menu for £125.
Tom's menu features include scallop with anchovy and seaweed pickle, venison loin with beetroot and duck liver sauce, and a whipped cheesecake tart with pear and blackberry.
The meal ends with options like Lainston apple juice and ginger pâte de fruit and salted nut nougat.
Mr Hamblet said: "It has been an incredible journey working with the talented team at Lainston House during my residency. I’m thrilled to be taking the head chef role for the relaunch of The Avenue, continuing to explore the region’s rich culinary heritage to create an unforgettable flavour-focused dining experience that helps put Hampshire on the map as an unmissable dining destination."
Tom's focus on sustainability and new techniques to enhance ingredients aims to provide guests with bold, locally influenced dishes, all set in the picturesque 17th-century Lainston House estate.
Beyond the dining experience, Tom will also host Season Cookery School classes at Lainston House.
These sessions will allow guests to cook with him, learning recipes from his MasterChef: The Professionals journey and his recent residencies.
