The Mutton, a well-known family-run pub in Hazeley Heath, is holding a Zero Waste Dinner.
The event will form part of Zero Waste Week, running from September 2 to 6. On Thursday, September 5, visitors can indulge in a five-course meal designed by head chef Rob Boer, exclusively for the event.
Putting sustainability at the forefront, the meal will highlight the very best local ingredients while promoting zero-waste principles through innovative cooking techniques.
The menu includes Mutton BBQ Ribs, Mackerel Tails, Broccoli Fritters, and Crackers all utilizing typically discarded parts of food to minimize waste.
Diners can also enjoy Mini Lemon Sole, which are often thrown away due to their small size, and sustainable, local Venison, served alongside a Bolognese croquette made from offcuts.
The menu concludes with Honey Roasted Figs, Fig Leaf Ice Cream and Breakfast Pastry Bread and Butter Pudding 'Doughnut', and Raspberries.
In an effort to enhance the meal, diners have the option to pair their food with a selection of sustainable wines.
Tickets cost £40 per person with a £30 supplement for wine pairings.
This dinner encapsulates The Mutton’s dedication to sustainable dining, allowing guests to be a part of an unforgettable evening of zero-waste dining.
Reservations can be made online.
