A NEW business has joined Winchester Market, bringing a 'healthier' flavour to the High Street.
Lynda Hardiman-Pearce is the latest face on the market, bringing 'Absolute Spud Shack' to Winchester.
Eastleigh-based Lynda Hardiman-Pearce, owner of Absolute Spud Shack, joins Winchester's High Street having spotted a gap in the market - and hopes to deliver a healthier lunch for market-goers.
"We started the business in April and it's been really really busy," Lynda told the Chronicle.
"I decided to have some more healthier options than the usual chips and burgers and whatever else there is, I started it up from nothing really.
"We had just been doing weekends at events, and this is our first market, and we'll be doing Wednesdays, Fridays and Saturdays as of now."

"We primarily sell jacket potatoes, we fill them with cheese or cheese and beans, coleslaw, coronation chicken, homemade beef chilli, vegan chilli, tuna, and this does change but these are the basics.

"We cater for vegans, we have vegan butter, vegan cheese and vegan chilli."
For those who might fancy something a bit different, Absolute Spud Shack offers more than just potatoes.
"We do nachos as well, a tray of nachos - fully loaded - with chilli, sour cream, guacamole, jalapenos and salsa.

"In the mornings we also do a hot drink and a muffin deal as well."
Potatoes are priced competitively and Lynda prides her business on its good hygiene.
She said: "Our basic potato is just cheese and costs £6.50, we use big potatoes and we cook them on the premises in our big potato oven.
"I make all the chillis myself, I've got a five-star hygiene rating here and I've also got a five-star hygiene rating in my kitchen so I can make them at home too, I used to have a business where I made fudge, so it's all rated there.
"I get my potatoes from Booker but I would like to use locally sourced, so if anyone could help me out and not charge sky-high prices that would be appreciated, I would love to buy all local but it is still early days for us at the moment.
"I was limited before and couldn't do any daytimes because my partner tows the trailer and he works full time - now I've got a driver who sets it all up for me and drives it.
"Previously we would just do events, a lot of firework displays, the furthest places we went were Bognor Regis and we did a festival on the Isle of Wight.
"We are now on the verge of getting a second van, with three days here other markets have cottoned on and said 'Hold on we want jacket potatoes'."
